Servings 12 balls

Ingredients

  • 10-12 dates soft
  • 1/3 cup natural peanut butter
  • 1-2 tbsp Dairy free milk regular milk works as well
  • 2 tbsp chopped peanuts
  • 1 thin rice cake broken/chopped into tiny pieces
  • 1/2 cup 80% dark chocolate melted
  • sea salt

Instructions

  • If your dates are hard, soak them in some boiling water for 10-15 minutes
  • Add dates and peanut butter to the food processor and mix until a thick paste forms
  • If paste is too thick and not coming together, add the milk 1 tbsp at a time
  • Once a paste forms, use a spatula to mix in the chopped peanuts and chopped rice cake
  • Using a spoon or a small scoop, add mixture to a parchment paper lined baking sheet and freeze for 20 minutes so they firm up a bit (this helps when you drop them in the chocolate)
  • Once balls are chilled enough, roll them in the melted chocolate and place back on the parchment paper
  • Top them with flake sea salt and store in the fridge or freezer
  • Enjoy

Notes

Rice cereal work as well. I prefer rice cakes because they don't have any added sugar and are gluten free. I use Lundberg rice cakes
These freeze really well and make a perfect after dinner snack ;)
