The date trend on social media is huge, and I knew I had to get in on it. I always loved a good Wunderbar growing up: chocolate, Rice Krispies, peanut butter, and caramel… yes, please. So here is my better-for-you version. Even if you don’t like dates, the combo with the peanut butter, chocolate, and crunch on the inside is next level. You don’t want to miss out on the flavor here!

Servings 12 balls
Ingredients
- 10-12 dates soft
- 1/3 cup natural peanut butter
- 1-2 tbsp Dairy free milk regular milk works as well
- 2 tbsp chopped peanuts
- 1 thin rice cake broken/chopped into tiny pieces
- 1/2 cup 80% dark chocolate melted
- sea salt
Instructions
- If your dates are hard, soak them in some boiling water for 10-15 minutes
- Add dates and peanut butter to the food processor and mix until a thick paste forms
- If paste is too thick and not coming together, add the milk 1 tbsp at a time
- Once a paste forms, use a spatula to mix in the chopped peanuts and chopped rice cake
- Using a spoon or a small scoop, add mixture to a parchment paper lined baking sheet and freeze for 20 minutes so they firm up a bit (this helps when you drop them in the chocolate)
- Once balls are chilled enough, roll them in the melted chocolate and place back on the parchment paper
- Top them with flake sea salt and store in the fridge or freezer

Notes
Rice cereal work as well. I prefer rice cakes because they don’t have any added sugar and are gluten free. I use Lundberg rice cakes
These freeze really well and make a perfect after dinner snack 😉
