If you love coffee and chocolate these high protein cookies are just what you’ve been waiting for. If you haven’t tried Beck’s Bone Broth Coffee yet you are missing out. I added some to these yummy little cookies and it gave it just the perfect amount of coffee flavour, and combined with a some chocolate…muah 🤌 Chef’s Kiss
They are also gluten free, refined sugar free, and high in protein (8g per cookie). I know what you’re thinking, sugar free and gluten free, gross! But don’t knock em till you try em! I did add a little bit of pure monk fruit liquid sweetener to give you just the right amount of sweetness. Enjoy 😉
Gluten Free Mocha Brownie Cookies
Ingredients
- 1 Pack Beck's Bone Broth Instant Coffee
(Mix well and let cool before mixing with other ingredients) - 2 Cups Almond Flour
- 1/2 Cup Cocoa Powder
- 1/2 Cup Chocolate Protein Powder (I like The Nourish Market or Truvani)
- 2 tsp Baking Powder
- 1/2 tsp Sea salt
- 1/2 Cup Grass Fed Unsalted Butter (melted)
- 3 Eggs
- 1 tsp Vanilla
- 1-2 Tbsp Liquid Monk Fruit Sweetener (The more you add the sweeter they will be)
- 1 Cup Chocolate Chunks (I like Enjoy Life or Lily's)
Instructions
- Combine the Becks Broth with 3 TBSP of hot water and set aside to let cool
- Preheat oven to 350℉
- Combine Almond Flour, Cocoa Powder, Protein Powder, Baking Soda and Salt in a bowl.
- In a separate bowl combine eggs, melted butter (make sure it's not hot when you mix with the eggs), vanilla, monk fruit sweetener and Beck's Coffee (make sure it's cooled)
- Add the dry ingredients to the wet and mix well to combine.
- Mix in the chocolate chunks
- Dollop on to a baking sheet (makes roughly 20 cookies) and bake for 8-10 minutes.
- Sprinkle with some coarse sea salt and ENJOY 🙂
